Easy Vegetarian Recipes for a Paleo Lifestyle

What can I say, I’m so proud of my wife and all her amazing work! She does 95% of the cooking at our home and I wouldn’t be nearly as healthy if it weren’t for her. She makes all of our 22 month old’s food as well. Madison hasn’t had processed food or sugar in her life. That sure wasn’t the way I grew up nor was it the way my wife was raised. She was a sugar addict to say the least and like many of us, grew up on soda, ice cream, and TV dinners. Thank God things have changed to water, dark chocolate, and fresh vegetables.

My wife’s name is Lauren Lobley and she continues to impress me with her creativity, her generosity, kindness, and beauty. She has an unbelievable knack to make you feel like you’re in the same room with her and that she’s your long lost friend sharing a secret with.

Her newest installment is a culinary journey from her sugar addicted days to her current, nothing but whole food days. I actually went from being a steadfast sugar burner, meaning I was pounding down sport drinks and carbohydrates like nobody’s business, to a low carb eating, Paleo, “fat burning beast,” like Mark Sisson, author of Primal Blueprint, likes to say.

This lifestyle was the best choice for me and it actually helped me reverse my diagnosis of pre-diabetes. I know it sounds crazy, but you can definitely change your life with diet and lifestyle changes. In fact most of the deaths in this country and around the world happen too soon and with proper nutrition and exercise people would live a longer, healthier life.

Here are a few ways to be more Paleo, cut out the processed foods, and eat healthier. Another way is to order my wife’s book, The Accidental Paleo, and start your journey into the world of whole foods and happiness!

Eat More Whole Foods & Veggies

It sounds simple, but we’re so fixed on that quick fix that sometimes we just don’t think of the damage it’s causing. The problem is, most fast food comes with all the beige foods like potatoes, fries, pasta, and bread. It takes discipline to say no to that and yes to the greens, yellows, reds, and purples. That’s what our bodies need more of.

Eat Less Carbohydrates

This was a tricky one for me. I love my veggie burrito, my occasional sushi, my oatmeal and banana. But the truth is that most humans can only process 50-60gms of carbohydrates per sitting or per hour. That means once I had my oatmeal, 30gms, and banana, 34gms, I’m already over stimulating my pancreas and those extra carbs turn into fat. If there was one thing to realize as you continue to get healthier, take note of how many carbs you’re eating. If you’re going toward a Paleo lifestyle you’ll want to keep your daily intake under 150gms of carbs per day. 50gms per day or less is Ketogenic, which definitely has it’s benefits and up to 100gms per day will definitely help you lose weight.

Drink Less Sugary Drinks

This is probably the biggest culprit of our time. The 32oz soda, the Big Gulp, and the Venti sized anything is killing us. Stick with water, the occasional afternoon coffee, and more water. Alright, maybe the occasional glass of wine, but make it red wine. There is only about 3-4gms of carbs per glass of red wine. Otherwise, stay hydrated and hydration in my book is when your body is so full of water that peeing is inconveniencing you. Cramps go away, you’ll get sick less, and so many more healthy benefits.
